I want to brew with mangoes in my fermenter but I was thinking about smoking mangoes. How would that work? Any special procedures? How long to smoke it for?

Might be hard to keep it lit,let alone soaking the easy widers. jk. Seriously though,put'em in a shallow pan skinned in a smoky fire for maybe an hour. Maple or ash would be good.

Might be a noob question but is smoking the mango going to give it heat to cook out some flavor or will it keep the same amount of flavor? The recipe calls for 3 mangos I was planning on smoking them all. Should I put more mangos for flavor? And the recipe says put them in the fermentor @ 14 for 7. Should I stick with that?

im sorry but i dont see the point in smoking the fruit. if you want a smoke flavor, even if you want the tiniest hint of it, why dont you just throw some smoked malt in your mash? youre just making a TON of extra work for yourself by smoking the fruit

I tried smoking bananas once, got a headache and that was about it


But seriously, what I would do is skin the fruit, place on a slotted tray and put on the smoker for a cold smoking session (sub 140f temps). As for how much to use there aren't a lot of guidelines to go with for some fruits. I know that for strawberries I end up using about a pound per gallon +/- because strawberry tends to be a delicate flavor so more than what you think you need in that case.

You can make a cold smoker relatively easily, it's called a venturi cold smoker. You can even use it indoors if you have a stove fan. The trickiest part is making the venturi tube itself. I've made one and I'm going to write up a tutorial one of these days. I managed to put one together with everything from HD or Lowes.

A lot of people smoke grain, and EVEN FRUIT, for brewing, winemaking or cooking.

It's pretty much exactly like this video.


This shows another way the tube is built.


Here's mine in action smoking some home cured bacon.



My setup. The venturi tube is actually the handle of a metal brushed used to apply flux when soldering cooper pipe.







You need a 100 gallon/hour airpump which you can get for about 20 bucks from petco. Any of the smaller ones aren't strong enough.

I rigged up a simple box to smoke into, and also store everything.
