I want to brew this upcoming Saturday, but I'm going to be leaving town for a week the following Saturday.
I'm thinking I'll make the belgian dubbel from Brewing Classic Styles. The recipe recommends pitching at 64 then letting it rise to 70 over the first week. Once I hit 70, I'll be leaving town for a week. Do you guys think it's ok to let this beer sit in the primary at 70 until I get back? At that point I'll plan to keg it.
