Those that have used Safbrew t58 - do you think it's the chimay yeast? I've used both the white labs chimay and Safbrew t58 and there seems to be a slight difference in flavor. Thoughts?

Not a chance, doesn't taste anything like Chimay (WY1388, or is it 1214?) to me. T-58 is too peppery to be it.

I thought I remembered reading it somewhere. Wonder why there isn't a solid Belgian style dry yeast put there?

T-58 isn't bad, just not the Chimay, Westmalle, or La Chouffe strain. Creating dry yeast is not as easy as liquid, perhaps something about the strains causes more than typical difficulty too.

I thought I remembered reading someone speculating about it being the same strain too, but after using both I don't think they're that similar at all.

Most definitely NOT Chimay!

The reason there are so few dry Belgian atrins is the same reason there are so few dry yeast strIns in general....not many yeasts take well to drying.
