Keep in mind this is just for the "0" minute hop addition. The 15, 10, 5 or whatever your hop schedule is, all go in at those times.

Just cool to 175 or so, dump the last addition in, stir and let it sit for 10 or 15 mins, then continue cooling to pitching temp.

That will be fine...Cascade adds a grapefruit aroma, so that will work well. I would avoid earthy, or flowery hops with this recipe(nugget, simcoe, Amarillo, palisade, ect) They tend to clash with the mango, honey, toast flavor.
