Default Revisiting my first ever batch.

So due to overwhelming demand from SWMBO and everyone else who tried my first homebrew, I decided to make another batch today. Now I've made 4 other batches since then, 2 extract & 2 PM, and had no real desire to make this one again. It was a Munton's IPA Bitter prehopped kit that I made with 3# Light DME and 1# honey. 1 week primary, 1 week secondary dry hopped with 2oz Amarillo pellets, and then bottled with 3/4 cup of corn sugar. It was fully carbed and tasted great after 1 week in the bottle and tastes the same over a month later. The main reason I didn't really want to make it again was because it was so basic and simple. I'm collecting stuff to move into AG 10gal batches and I guess I've been looking down on my extract brews for some reason.

Anyways, I bought the stuff I needed from the LHBS and brewed this same recipe up again today with the exception of adding .5oz of Mt Hood pellets at 10mins because I had them laying around. I ended up with 5.5gals in the carboy at an OG of 1.054. I pitched the dry yeast that came with the Munton's kit at 1pm after rehydrating it for about an hour in 80ish degree water. Around 6pm I went into the brewery(aka spare bathroom) and there was some krausen forming already and the airlock was bubbling. I went back in at 7:30 and it's like a hurricane in there. None of my brews have taken off with such little lag time or so vigorously.

I'm about at the point where I'm torn between revisiting prior recipes, trying to improve on them like you did, and trying out new styles... That sounds like a good beer though!
