Why not just do a freeze process with the beer once fermentation has ended?

Take beer and place in container in freezer, skim everything that freezes and toss it, repeat until it stops freezing at all then have a drink.

I am planning to test this out starting tomorrow just as a curiousity more than anything else...if I had some liquid nitrogen I would take it a bit further and use a barley wine to do this.

That sounds good! Yeah I'm brewing a candy cane chocolate stout right now and added the candy cane at that point. Similar idea. We'll see how it turns out

as far as this, I tried this with my cider to make Applejack but it didn't work very well. I applaud your curiosity but I don't think I'll be freezing my beer any time soon. That's going to basically separate the ethanol from everything else and I'm not trying to make liquor...this time. Thanks for the suggestion though
