Man, US-04 makes one ugly krausen.

To preface - I ain't worried about the ferment. This is my newest ordinary bitter recipe (MO/oat malt/a touch of pale chocolate), bittered with Willamette and another ounce at flameout. I've seen enough kräusen during my brewing career to know when something's amiss. But every so often, US-04 surprises me in its sheer ugliness.

And when it settles, the trub will compact to three or four tofu chunks. I've had to "break" chucks up in the laundry sink to get it to drain.
Love me some S-04.

My personal favorites are the ghostly nebula that hang just below the surface during early kräusen.

Sounds familiar, I have had to shake the carboy to break up the yeast cake before in order to get it out of the bottle.

I just kegged a stout yesterday that I used S-04 on. I've used it before, but this is the first time that I had 2 inches of clay looking trub. MMB is right, I had to break it up to get it to go down, I love S-04

S-04 is my favorite yeast, hands down... Here it is, demolishing an Imperial Stout:
Krausen is low due to FermCap.

Yeah, S-04 is my go-to yeast now. It hits like a champ, has good temp tolerance (up to 75F i think) and has that fruity English character. Good stuff.

I used it for the first time last month for a Southern English Brown and it is my new favorite beer. I think this is my new go-to yeast for any brown ale.
