Fermentation is underway! This will be my 1st lager. I am really excited and nervous for this to turn out just because it is so special of a brew.

Default Update

It is all done lagering and is now on gas. I will leave it there for a few weeks to get nice and carbed while I design the label. I have procured his 48 bottles and will be using them to bottle this up as planned.

I did pull a sample and it is clear and tastes great. It has no detectable off flavors that I or my wife can tell. I will not be pulling any more samples until after I think it is carbed as this is not for my consumption alone and I do not wish to waste any of it.

I will post up the label and pics when I bottle. On a side note my ale version that was slightly different also tastes great and is bottled up. Sadly only 20-12oz bottles remain of that.

Default Bottling day

What was to be 48 bottles was actually 96. I cleaned and bottled 58 of them today with a full pint of "waste" and it is DELICIOUS! PROST! The wife and I will design the labels + story and I will seal them with wax + foil. When I have the bottles 100% done I will post up some pics.

While the beer was carbed up awhile ago, I was having troubles "finalizing the brew and moving it off the tap". I am now much closer to to finalizing the beer and feel better in the process.

Default Almost finished.

I will be dropping the beers off this weekend.

The background was a pic my wife took of the sky at his 60th B-day party and his pic was from our wedding.

The bottles have all been dipped in sealing wax. I will be applying the labels shortly.
