... tastes like lightly fermented wort.

Its an eastern European drink made from the fermentation of rye bread, barley and yeasts.

The Mad Fermentationist www.themadfermentationist.com has recipes and tasting notes from a few Kvas he's brewed. I've not made one, but it does sound interesting.
