The funny thing is, you get people who say they don't like the Guinness Extra Cold. Bar men I have spoken to say they secretly laugh as it comes out of the same keg as normal Guinness it's served about 2C lower temp.
Guinness pouring is supposed to have a 1-2minute rest in the middle. One of the recent adverts for Guinness here was "Guinness Time" and amounted to actors acting out what they would do while waiting on the pour.
The pint is pulled to about half full and allowed to sit and rest to settle for a few minutes with small or no head, then topped up to near full and eventually the tap pushed to gain the head the barman wants, usually about 1/2" and actually sitting slightly over the rim of the glass. In addition some pubs will draw a shamrock on the head. Even then you should still sit mesmerized and watch the gas settle up into the head and beer to go completely black again before drinking.
Busy bars quite often have a Guinness queue of half full pints in a line settling, so when someone orders a Guinness one of those can be lifted and topped off.
As to 100 Euro more for beer.... in Dublin this would not be much, especially if you go to any of the night clubs in Temple Bar. A pint, last time I was there was something like 6 Euro in a cheap place and more like 10-12Euro in a big night club. Basically a night out in Dublin is annoyingly expensive. £100 or more would be easily killed on one night out.
