Check out the water chemistry primer on this site. Basically, acid malt lowers the ph of the mash, because it comes with some type of acid on the outside (lactic?). Anyways, the point is that it lowers the mash ph. It can be potent stuff though, so read before you buy. Also, a 5 gallon batch only needs 2oz or so, typically
