Default first all-grain!

it's BREW DAY! woohoo!

Style: American IPA
TYPE: All Grain

Estimated OG: 1.065 SG
Estimated Color: 6.7 SRM
Estimated IBU: 48.4 IBUs (on the low side for IPA, but within style & still a .743 bitterness ratio)

Ingredients:

10 lbs 8.0 oz Pale Malt (2 Row) US (1.8 SRM) 84.0 %
1 lbs Munich Malt (5.0 SRM) 8.0 %
1 lbs Victory Malt (28.0 SRM) 8.0 %
2.00 oz Fuggles [4.10 %] - First Wort 60.0 min 15.2 IBUs
1.50 oz Cascade [6.80 %] - Boil 60.0 min 17.2 IBUs
1.00 tsp Irish Moss (Boil 15.0 mins)
1.50 oz Cascade [6.80 %] - Boil 15.0 min 8.5 IBUs
1.25 oz Cluster [7.20 %] - Boil 15.0 min 7.5 IBUs
1.0 pkg East Coast Ale (White Labs #WLP008)

can't do a full boil yet with a 16 qt kettle. And my mash tun is a 6.5 gallon bucket nested inside my 5 gallon bottling bucket. first thing went wrong when I added my grains, the temp was only 135°. I quickly boiled another gallon and added, which upped it to 153°. left it there for an hour. so what was supposed to be 12 qt strike (0.960 water/grain) ended up at 16 qt (1.280).

6 qt fly sparge and I ended up collecting 4.25 gallons at 53% efficiency. boiled 3.25 gallons, at least that went well, all hop & irish moss additions at the right time. 2.25 gallons into fermenter along with the extra gallon. then did a dumb thing; added water to fermenter to bring it to 5.5 gallons, so that brought measured OG down to 1.052, from estimated 1.065.

aerated & pitched wlp008 at 70°

looks like all #s will still fit style guidelines, except ABV, which is down to estimated 4.5% from 6.5

was a little worried; pitched at 6pm on saturday and the airlock was silent until 8am this morning, Monday. I checked it last night and there was krausen on the top, so I figured it was OK

this morning, still no activity, fermometer on the side of the bucket said 70°, so I took out the airlock, stuck a thermometer inside and it said 72°. ambient temp is pretty constant 66-68°, so I figured there was some sort of heat-generating activity going on inside

when I pulled the thermometer out and stuck the airlock back on, it started bubbling at least 2 bubbles per second.

not worried anymore
