I just knew I had a packet of Munich dry yeast in my freezer, it's been in there for a few months. In order to use it up I brewed a PM dunkelweizen last night. When it came time to hydrate the yeast I...uh...um...realized that I had a packet of Windsor, NOT Munich. Oopsie, no turning back now. I'm curious to see how this comes out as I've never used Windsor before.
Anybody else start a brew and then realize that you didn't have what you thought on hand?
