Default Diacetyl rest

I'm making a kolsch. I had it at 58ish for 6 days... The bubbling stopped completely. I brought it up to 65-72 ish for a diacetyl rest, and it started bubbling again............,, and has been bubbling for 6 days!!!! I want to cold crash it already for kegging. Should I wait til it's done bubbling? What would happen if I crash it at this point?

Not that I have any experience with this rest or its purpose but I know it is said over and over that taking an FG reading is they way to go. Bubbling isn't gonna tell you if its ready to be kegged if I understand things.

You should take 2 hydrometer readings3 days apart. If they are identical (and in the range of predicted FG) the beer is done and it's time to cold crash.

Take a gravity reading to see if you have received FG. That'll let you know what to do.

Wait for it to stop bubbling and then crash it slowly. In the future you might want to let it sit longer when you're fermenting at low temps.

It might be bubbling because it's fermenting, but more than likely it's releasing dissolved c02 since it's at a warmer temperature.

Once the SG reading is the same over at least three days (take one now, take on in at least three days), then it's ready for cold crashing.
