Default Brewing for celiacs with good results ..?

Oddly enough, I acquired a freezer from a former brewer, who gave up because of celiac disease...

Anybody got got results with the various gluten-free or alternate grain recipes when brewing for celiacs..?

If there is such a thing, I would be glad to help him out, even though I am sure he must have researched it on his own... unless things improved in past few years --better supplies, newer processes, etc.

Sorhgum syrup is used in non-wheat brew from what I understand. That is the main fermentable. You will have to search around to find some and it will likely be more expensive than malts. Honey can be used to suppliment, no gluten anywhere near there. Hops are a non issue when it comes to celiac so is most yeast, molasses is used to cultivate at most yeast producers. Shouldn't be that big a deal to brew a non-wheat beer, won't taste exactly the same but it will be beer.

Sorghum syrups are carried by most online stores now. The biggest problem is the lack of GF specialty grains. That really limits what you can make and the ones I've had seem rather sweet. Maybe you & he can find some sorghum grain and malt small batches, then roast/toast them.
