Default the brewer's companion

Fianlly! A book that doesn't teach you how to homebrew!

I highly reccomend this book to someone looking to go a bit more in depth. The author doesn't waste any pages teaching you how to brew or little tips and tricks that everyone and their brother knows.
Decoctions, parti-gyle, recipe design, water chimestry, fermentation with different yeast, and bacteria including effects of pH, ester and fusel production, etc.

Best book on brewing I've read yet.
