Hey all,

In a Duvel extract clone it calls for corn sugar in the boil and then again in the secondary. Why in the secondary and why not Belgian candy sugar?

Do you think I can just use Belgian candy sugar, or will it impart flavor?

Most Duvel clones that I've seen require clear candi sugar. It's a waste of money to buy candi sugar over normal sugar in my opinion. The corn sugar will work just fine. The reason it's added to the secondary is so the yeast isn't overwhelmed right off the bat. I don't think it's a process that's real neccessary, but somepeople seem to think so.
 
Belgian Candi sugar is from sugar beets. If you care about or can taste the difference between beet sugar and corn sugar, it matters. If you can't, it doesn't.
