Default Beer Terms

I found this on a craft brewery site in Ontario (Canada) thought it was an interesting read, some of it differs from what I have read elsewhere and obviously some of this is specific to a brewery and not a home brewer.

I love the chart and how it shows the beer going under 14th Ave! Any idea about what a 'government cellar' is?

I am curious as well.

Kinda refreshing though to see a brewery that ages their lager for 35 days at 32F.

(1) Taxpaid beer will be segregated in such a manner as to preclude mixing with nontaxpaid beer;

Great clarification on that! It's crazy how the government thinks it "magically" changes once taxes are paid on it...
