I was hoping to get some suggestions for brewing a beer with a longer fermentation than I usually do. Up to now I have kept my brewing simple dealing with ales and hefs but I have a pretty good pipeline going now so I thought I'd use an empty fermentor to try a longer fermentation beer. I'm probably looking at a 6 weeks plus fermentaion and any suggestions would be greatly appreciated.
Russian Imperial, Barleywine, Old Ale, American Strong Ale, Lambic (months & months), a belgian strong (golden & dark), etc. Basically anything complex and high gravity will do the trick. Most listed should be aged longer in all actuality.
