I'm not yet looking to brew a beer that high. I was mostly wondering if my hunch was correct and it seems like it might be.
When I brew a 10%+ it'll be all malt. Cause that's how i like to brew. With the exception of extract as little processed ingredients as possible. I don't know maybe i'll try my hand at a beer like that and use "unprocessed" sugar or honey.
