Moisture under wax
Had no idea this was here (have been hanging out in the mead forum:))
Have made a few farm house cheddar cheeses using 12l of milk
Soft waxed it followed by hard wax, it's been aging in a cold 15c cupboard.
Went to check them and they each had a pocket of fluid bubbling around under the wax at the bottom
Any idea of what went wrong. Is it still ok. Have taken of the wax dried it and rewaxed it...
You will probably have to find out what the bubbles actually are, whether it is accumulating whey or a gas. Then you can decide what direction to go in in with the wheel.
How did you process the cheese during the drying stage? May be whey or a late blooming contaminant that is giving off gas. I would cut open the area on the wheel that is affected and take a look. You can always re-wax that area afterwards.
It's just watery stuff, by bublbling it moves around, when you flip the cheese it works its way to the other side,
Did it not dry long enough before waxing.... Last time we left it longer to dry it cracked quite deep....
Have cutoff some of the wax and drained it.... Is that ok anyone have this problem
The couple cheeses that I have waxed didn't have this problem, but cutting it open and releasing the whey would be something I would do.
Just reseal after draining..
