Default Cheese at Westvleteren

Hello,

I went to Belgium last month and had some great beer at the Trappis St Sixtus Abbey at Westvleteren as you can see from the picture below. They had some unbelievable aged cheese there. Does anyone know what type of cheese it is so I can try to make it. It was very stinky. So bad I couldn't keep it in my hotel room the next day. Very mild flavor though. It was great on the crouque monsieur.

Thanks,
Tom
