Default Aging

I have been reading a book on making cheese and was wondering if it is absolutely necessary to have a fridge dedicated soley to cheese for aging. Any advicenis appreciated! Thanks!

I've been planning to build two cheese caves like this one (http://www.homebrewtalk.com/f130/thi...-today-282517/) and hold them at different temps and humidity. Check them out!
