I just brewed the beginnings of a sour with 6# of pilsner, 3# of wheat, and S-33. My question is if I should be able to pitch my Imperial Porter I'm doing next on the cake? The projected OG on the porter is 1.113.
I think that would work out fine.
How long do I have after I rack the beer off before I need to pitch the new wort onto the cake?
