I've got a heavy duty pilsner (way overshot efficiency estimates with new system). It's still too sweet, but it wouldn't finish with lager yeast.
Has anyone repitched with any particular yeast to finish out a lager? I've heard expirements about champagne and ale yeast pitches to finish them out. I'm not worried about mucking up the batch, I won't drink it as it is and would rather try something to make it drinkable.
on another note, I think the overshooting of gravity may also mean that the hops is low, so I am considering a hop tea addition with some water-boiled high-alphas. opinions on that might help as well.
