Default Will this be beer?

I brewed on Sunday night, but left the hydrometer in the tube on the kitchen counter. At lunchtime today I notice a nice krausen on top and a steady flow of bubbles. The krausen looks about the same as what is in the fermenter. I've read that in the early days they didn't even know what yeast was and that it actually had to be added to the list of ingredients in the German beer laws. Normally this would be thought of as an infection, but will it be beer?

Ya, it's beer, but what it will taste like is up in the air. I'd give it a shot - can't hurt anything.

If you took your hydrometer reading after you pitched your yeast, it's likely the same beer that's in your fermenter. Infections generally look funkier than that (and will smell funky, too).

Give it the sniff test. If it smells like your sister's panties after a long bikeride, I'd say toss it.

No, I took the reading before pitching. The krausen dropped a bit when I pulled the hydrometer out at lunchtime. I used a rubber band to secure a piece of paper towel to the top and sprayed it with some sanitizer. Kind of like the cloth over the fermenters that used to be done. It'll be interesting to give it a taste in a few days. Or is this one of those "make you blind" situations?

I have a sister, but not sure she'll agree to the sniff test.

Lambic anyone? Well, not a true lambic, but it's the same principle. You've probably just caught a few local yeasties. If it tastes good then maybe try culturing the strain to try in a larger batch (1-3 gallons at first).
