Default What the hell happened

So I made an ipa. Union Jack clone with changes. I moved the beer to the keg and crash cooled. The beer was good but needed dry hops. So I sanatized a nylon paint strainer and added the dry hops with sanitized marbles. Purged etc. beer was 35 f. Then I allowed the temp to raise to 68 overnight to extract the aroma. This was last night. I used a lot of dry hops. Like 6 oz as the recipe calls for. I drew a pint after dropping the trunk and this beer tastes like crap. Somehow it tastes sweet it was dry before. I know I sampled at 68 but what gives. It reminded me of an unfermented hydrometer sample.

"dropping the trunk"?

It's a bit hard to imagine how a dry hop addition could sweeten the beer - especially so quickly (one day?)

Two things changed - the hop addition and the temperature. Bring the temperature back down and see how it tastes.

Cheers!

I think some of the first flavors (1 day) to come off cascade are sweet. Give it a week.

I wanted to serve this in 10 days. Am I better off at 68 degrees to dry hop. I raised the temp 2 days ago. Thanks.

Well I raised the temp to 70 and let it sit a day. I think some of the vegetal sweetness has faded. One thing is for sure. The aroma and taste are much hoppier. I'm gonna dry hop another day. Then should I crash cool or keep it warm for a few more days of conditioning? Thanks.
