Default Vanilla Beans & Whiskey

Hey Guys,
I want to brew a Smoked Vanilla Whiskey Porter (5 gallon extract) and would like to hear suggestions on:

  • How many vanilla beans to use?
  • How much whiskey to use?
  • How long to soak the vanilla beans in the whiskey?
  • When I split the vanilla beans should I scrape the seeds? If so, do I put them in the whiskey also?
  • Will adding this to the secondary for 7 days be long enough?

I did a bourbon vanilla porter so I would do the same with whiskey
3 beans cut and scraped with the goo going I to mason jar with whole beans. I'd add 4 oz of whiskey and let soak at least 7 days. Add to primary and taste in 7 days, if you want to give mor time then you can.

Search for Denny's bourbon vanilla porter recipe, it's fantastic and will answer your questions. Just add or sub in a little smoked malt for your purpose

Well I used 3 vanilla beans (because that's what came in the package at my HBS) and 6.7628 ounces of Jack Daniels (because that's what 200ml is)...... I split and scraped the beans and drown them in the Jack 3 days ago.... Good Lord it smells good! I can't wait till the weekend to add it to my Smoked Porter, transforming it into a Vanilla Smoked Whiskey Porter!

I transferred to secondary today. I poured the vanilla whiskey cocktail into the secondary and then racked over it. I took my gravity reading after it was finished and sat for about 15 minutes or so. I'm guessing that I should have had the forethought to take my reading before adding the whiskey, but too late for that! The test sample was good, but a bit alcoholic.... LOL
