You mean I just suck at brewing?

Edit: Don't no how typical my water is but here's the profile.

I know when I plug all the numbers into JPs spreadsheet it says my water profile is suited to low SRM beers.

Update: I've switched my darker AG recipes up. What I do now is a standard steep for darker grains then add the liquid to the boil. All my problems appear to be gone after doing 4-5 batches this way.
