Well, boys and girls, I have officially used up every single carboy. For the second weekend in a row, I brewed an AG and PM side by side. Here's the mash water being heated, with everything ready to go...
On the left, there's the AG Pacific Gem Special Bitter. On the right, you have the PM Munich Summerdunkel. A beautiful sight! Everything went perfectly. The Pacific Gem fermentation has yet to take off (pitched half a quart of fresh WLP005 on it!), but the dunkel is in the lagerator and about to hit the blowoff tube. I pitched a rather raucous 1000mL starter of harvested bohemian lager yeast. I certainly was not expecting such a huge krausen on a lager, but I'll be damned if it's not threatening to blow off today. I'm furiously trying to get the temp lower---the temp controller is set to 38f right now. I'm hoping that running the freezer for longer today will slow things down a bit, as the carboy temp is a bit high.
I did have to bottle my bohemian pils in order to free up the lagerator. So, now I have...4 brews in primary and 3 in secondary. I think I'm gonna take a break for awhile.
Oh, and as for the efficiency...I'm not sure what happened, but the dunkel was supposed to 1.056 OG, and it ended up at 1.068 or so. I'm worried that 23.6 IBU on a 1.068 brew might be a little underhopped. I'm considering a water-only hop tea addition...anyone have any thoughts on that?
