Default Saccharification & additive IRA

I am going to make this "India Red Ale" next weekend:

They say 40 min saccharification at 149F and 15 min at 153F but this is it. So, I suppose I have to perform protein rest 122F and mash out 168F. I do have beer smith but it is hard to figure the volume of water and its temperature I have to use in each step since it looks like the beer smith does not have this exact option. I am working with a 5 gallons cooler and a boiling pot.

They also say to use 0.5 the spoon of yeast nutrient at 15 min and 0.5 Whirlfloc at 15 min. Is this really necessary if I do not mind about the suspension?

Seems like I didn't not have much success with this post. I made the beer anyways. Worked good. I did a protein rest 15 mins at 122F, 40 mins at 149F, 15mins at 153F and 10 mins at 168F using a decoction method. I did taste it last weekend when bottling and I think it is going to be a good one. A little darker than I wanted it, I will put less pale chocolate next time which should be soon. Plus I got this Simcoe hop I want to try.

I do a similar beer, with a straight mash temp in the low 150's. All those other rests are pretty pointless IMO, only one I'd consider is a 100F or so for time to adjust PH if so desired.

Thanks, good to know. Maybe next time it will be less trouble to do simple mash in mash out.

That's quite an interesting mash schedule. Looking at the hop additions, I'm guessing this had a monster aroma? Post some pictures when you get it kegged up! I'm interested to see how this turned out.
