I just gave up worrying, the beer is ready when it ready and the yeast are going to do their job as long as I do mine right. Providing a good and quality working environment and they are the hardest workers I have ever seen. And oh do I love their performance.
In Primary: Belgium Chimay clones.
In Secondary: Braggot, pale ale, end of the world white.
Conditioning: Mead, Cider, braggot, Belgium Wheat.
On Tap: Clones, Chimay Blue, Red, Porter, malted cider.
