Default Mashing?

What is the best method to mash Vienna Malt? Step mash or Single infusion?

for what sort of results? A step mash can take care of pH problems if the water used is too alkaline for the grist, can get rid of some proteins to improve beer clarity, and so on. lots of people use single infusion for most beers because the marginal, or perhaps absent, difference isn't worth the extra bother. Some use step mashes because it's traditional for certain styles. there's nothing about vienna malt that makes it more or less suited for a step mash or single infusion than any other malt.
