Default Irish Moss Question

What are the rules about adding Irish Moss while my beer is in secondary?

Rule #1.
Don't.

Irish moss works in the boil, it won't do anything in secondary. If you need to clarify beyond what occurs naturally (it is, remember, a clearing tank), use gelatin, or I think polycar and Isinglass will work in the secondary.

Ditto, the protein binding only occurs at high temperatures. At low temperatures, carrageenan is a thickener.
