Interesting Read on Wheat Beers
Makes me want to brew a hefe! I found it interesting that stirring a wheaty mash could contribute to a stuck mash, and that open vs. closed fermentation makes a difference on the flavors.
The overall site is sort of geared towards commercial breweries, but there is a lot more information there that I need to look through.
