An icebath worked great for me til I got my wort chiller.

I've been liking the jugs in the freezer method. I usually put the brewpot in an ice bath or just a cold water bath if I don't have ice for about 15-20 minutes then add the cold top-off water and it works great! Be careful of temps though, it's possible to get it too cold with this method. I usually take a temperature after adding each gallon but I always mix my wort in a bucket before transfer to the carboy.

another option is to freeze 16 or 20oz water bottles, and then santiize the outside and just float em in the wort.

then your wort volume doesn't change, and the risk of infection should be nil. I'd only make sure the wort was down to 170F so the plastic bottle doesn't melt/warp/get too soft.
