Default Houblon Chouffe - Where's that head come from?

I'm sure others have noticed that wicked marshmallow-like fluffy-cloud head smack dab in the middle of the glass when drinking Chouffe. I've never seen a head quite this sticky in any beer. Does anyone have any ideas how they do this?

Very long protein rest's from what I have been told. You can try to achieve it by doing a rest at like 118 or 120 for about 30-40 min. I haven't had much luck myself but I haven't tried real hard either, a friend did a clone and came pretty close.
