Default homegrown hops & funky brews

So I made my best three beers last summer, and the the beers I've made with my own hops are a bit funky. I don't know what dank is...but that's what I imagine the taste is. Its not necessarily vegetal either. The beers just don't taste balanced.

Talk to me about homegrown hops and beer flavor and balance. Anybody have anything go really wrong? And yes, I grew the plants well and harvested at the right time.

What strains do you grow and use?

Some strains of hops impart characters that include "dank". I don't happen to grow any - Chinook, Cascade, Centennial and Fuggles are what I've been growing and using for three years, and "dank" isn't their thing.

Also, when you pick can matter. Pick too early and you don't get the highest potential aroma and flavor, and you may be tempted to make up for that by using a lot more hops, which brings less desired characters into the mix than would be the case with more "normal sized" hop pitches.

Finally, post-harvest treatment can mean the difference between bright characters and muddle. If you don't dry the cones to around 10-20% of their wet weight you risk mold formation inside the cones (where you can't see it) - something that vac-bagging and freezing will then preserve...

Cheers!
