Default Help convertinga Lagunitas IPA All-grain to extract

Here's Jamil's recipe:

Lagunitas IPA: 6 gallon post-boil volume
O.G. 1.060 F.G. 1.020 (Target 1.018) IBU's 46.8 (Rager)

10.9 lb. American 2-row
.87 lb. Wheat Malt
.82 lb. Munich 10L
.55 lb. Crystal 60L
1.3 lb. Crystal 10L (brewer stated Crisp Crystal 15L - Wassup Jamil? :wink: )

Mash temp 160. (Jamil suggested reducing to 158) Burtonize H20.

Boil 60 minutes
4 g. Summit 18.5% 60 min
10 g. Horizon 12% 60 min
23 g. Willamette 4.7% 30 min
11 g. Centennial 10% 30 min
34 g. Cascade 5.75% 1 min or knock-out

Dry hops: 21 g. Cascade, 21 g. Centennial for 5 days (brewer cold crashed and left in for 7 days)

Yeast: WLP 002 or WY 1068 London ESB
Ferment at 66 for 3 days, ramp over 3-4 days to 70
First off the grains are a little confusing w/ the small numbers and how they would translate to steeping. The other bigger question is the hops schedule. The amounts are weird to me. Also on the yeast would Burtons be a good substitute for the London ESB? I've already got some of that on hand. Can you guys help?

DL the free beersmith trial, enter the values and then convert recipe to PM. Don't have much advice on the yeast swap.

I have already been playing around in Beersmith with it. The biggest change I made was the bittering hops. I have centennial but no warrior, magnum, summit, horizon, etc. It shouldn't matter that much for just bittering should it? Here's what I've got so far:

I would agree with you on bittering hops. The complexity of this brew mostly comes from aroma, flavoring, and dry hopping.

btw: I see you've got Oktoberfest Ale bottled. Did you happen to use BierMuncher's recipe or one of your own. How did it turn out compared to traditional lager method?

This is the recipe I used and I was very happy w/ it. Some of the all grain brewers around here approved as well.

OKTOBERFEST ALE

5.5 gallon boil
10 oz Caramunich
8 oz Vienna
2 oz Victory
Steep at 160º 30 min
6 lbs Light DME (60 min)
1.00 oz Vanguard [4.40 %] (60 min) Hops
1.00 oz Hallertauer [3.20 %] (20 min) Hops
.5 oz Hallertauer [3.20 %] (1 min) Hops
WLP029 German Ale/Kolsch Yeast-Ale 2 liter starter
I kept it around 65º for the first few days but kept it below 72ish the entire time. It cleared nicely after a couple months too.

Well I'm HIGHLY disappointed in the bitterness of this beer. I just racked it to secondary and there's barely any bitterness. Beersmith gives it an IBU rating of 44 but its nothing near what I expected. I think I put the recipe in Beersmith before and it gave me something in the high 60s. Has anyone else seen the bitterness in Beersmith to change from recipe to recipe with the same ingredients? I'm going to research making a hop tea; I HAVE to up the bitterness or I'll never enjoy this beer. Can anyone offer suggestions?

You ran that through Beersmith? I ran it, and the IBUs are 23ish.

Remember, the steeping grains aren't going to give you anything. 6pounds of DME gives you an OG of 1.052 and the IBUs in a 5.5 gallon boil come out to 23. That very low- I don't know how you got 44 for the same recipe unless your boil volume was wrong.

Honestly Yooper I don't get it either. I'm using the turkey fryer which calls for a 6.4 gallon boil volume. I do boil over 6 gallons and end up w/ right at 5 gallons after a 60 minute boil. This copied from Beersmith, I just rebuilt it since I have the recipe saved on a different computer.

EDIT: Yooper were you looking at the Oktoberfest recipe? The IPA recipe is in the 3rd post, not further down. I posted that for wscott823.

Any idea what I did wrong? I just did a 30 minute boil of .5 oz of warrior in 32 oz of water that reduced by about half and I'm about to add it to my secondary. I've got a french press so I'll filter out the hops before adding it in.
