Default Help! Brewing as I write...

I am brewing a Belgian Honey as I write this. It is an extract with steeping grains. I have steeped the grains for about 30 mins at 155 and I have got called away for about 2 hours. Should I leave the grain bag in the pot while I leave, or remove it and cover it up. Either way it should be okay right??? Thanks in advance!

I would remove the grains so they dont soak longer and cover the pot. since you still need to boil that will sanitize anything.

but I am no expert
