Hey Vegas guy, Welcome

I live just two hours north in Southern Utah. Where is the homebrew store in Vegas. I didn't think they had one.

dont forget you have to chill it to 60 um something (68 works) to pitch your yeast your gonna need a wort chiller. or you can do like I did on our first batch float it in my pool for an hour or two.

Default You can do w/ out the wort chiller

Put the water that you are not using in for the boil in the fridge the night before. Then when you add that it usually cools it off to the appropriate temperature. You can also put ice water in your sink and put the wort in there. Obviously wort chiller is better, but this works to save money.

Everyone hit the important parts but here's some more detail on the partial vs full boil.

The AHS kit already assumes you're boiling 2-3 gallons, not 5 or 6. The hop amounts and addition schedule already assumes this. If you try boiling the full amount, you'll have a way more bitter beer than the recipe called for.

Full boils also require a chiller and a method of aeration/oxygenation. Stick with partial boils for now.

Where you at? St George area? The LHBS is a joke here. It was the warehouse for www.brew-kits.com. The two guys that were there seemed pretty knowledgeable. They're both part of the SNAFU (Southern Nevada Ale Fermenters Union). But the shop was a mess, and lacking in everything. The guy was really biased and only carried products that he liked, as opposed to what his customers liked.

Now they have moved locations and they are called
AAA Indoor Organic Garden Supercenter. They pretty much suck. I guess they would be ok for something in an emergency. I just called a few minutes ago to see about getting a couple carboys. The guy on the phone had to ask someone else there what a carboy was. And then once he figured out what a carboy was, he told me they don't sell them, nor can they order them. I think in Las Vegas, your best bet is the internet.

Maybe I should open a LHBS here in Vegas. Obviously we need on ehre. I just wonder if there is a big enough market here....
