Just curious I plan to that with an ale to basically experiment to see how clear I can get. Wouldn't the cold temps really kill the yeast though making carbing in bottle difficult?

Unless the beer actually freezes, it won't kill the yeast. It will remove a lot of yeast from suspension, but there should be plenty left in suspension to carbonate the beer. Just crash chill it for a day or two. Wait too long and you will drop too much out of suspension. As a safety measure, you could suck up a small amount of yeast when racking to make sure there is enough yeast for carbonation in a reasonable time frame.
