I just went through the same deal. Four ounces of Choc. is a lot in a 5 gallon batch. I'm going to cut it back to 2 next time. I also used Tettnang, along with Simcoe. I thought the Tett got a little lost in the choc., and it was pale chocolate. The Simcoe did a little better, but it is definitely a malt balanced beer - like you said, very roasty. I was shooting for something between a standard brown and something hoppier, like Stone Arrogant Bastard. Next time, I'm going to dial back the chocolate, up the bitterness, and maybe try a hop that's got a little more ass, like Northern Brewer or Cluster. Not 100 % my cup of tea, but it's smooth with no off flavors - I think my brown ale drinking friends will like it.
