Default Attention Hefe lovers!

I know that Hefe's are best when consumed young. I also know that there really is no need to secondary a Hefe. With that said, what would be the shortest time that you guys would consider, kegging, carbonating and serving a Hefe?

John

10 days in the primary should do the trick as long as the FG looks right

Thanks chill, that's what I was thinking too. It's at 7 days today. I just took a gravity sample and it's down to 1.012 from an OG of 1.052. I'm happy with 76% attenuation, and it's still nice and cloudy with yeast. I'll check it again at the 10 day mark on Tuesday, keg it, chill it and carbonate it.

See if it'll stabilize at 1.012 for a couple of days. I'd consider it done then.

I did one at seven days. I think ten would be better IMO.
