Star San for pH Correction?

Since Star San is a food grade acid based sanitizer which is safe to ingest at low concentrations, can anyone think of any reason why it wouldn't be useful for pH correction? Since it's supposed to be totally neutral in taste and color I would think it would be very useful in a mash if the proper pH range isn't hit after strike.
 
Doesn't Star San have a surfactant in it for foaming? This might cause problems like mega kruesen.
