Default Simple question

Can/will yeast create its own amylase in a starch solution? If so, is this in sufficient quantities to effect a brew with a significant quantity of starch?

Yeast cannot break down starch - at least at any rate meaningfull in brewing

cool...

we have whole genomes of yeast mutant libraries at work, but most of them are in a background I am skeptical of using for brewing....
