Default Break separation

So before I aerated with pure o2 the massive amount of break that made it into my carboys was settled all on the bottom. After aeration it split as you can see in the picture and it hasn't settled even slightly. My questions are what causes this and what is the difference between the two materials?

The first pic looks like nothing has settled out yet and the second one looks like the Irish moss is pulling the cold break down. How soon after chilling are the pictures.

The first is after 6 hours and the second was about 10 minutes after chilling.
