Default Natural Fermentation IPA?

I've only recently begun experimenting with natural fermentation, and began doing so for a root beer I brewed. I cultured a yeast with ginger/sugar/water for about a week and it got crazy bubbly. The root beer is sitting now, so I haven't gotten to try it in context.

But it got me thinking about brewing a beer with this yeast. I was thinking about a Pale or an IPA; anyone have any experience with what sort of style might work best with this? It's smelling pretty sweet with hints of ginger and actually a bit of lemon citrus. Also pretty boozy smelling.

I'm thinking about doing just a one gallon batch of something pretty simple so I can test out the yeast. I've got an IPA recipe I have used in the past with good success, and considered trying that out since I know what it tastes like with a more traditional yeast. But I wonder if that might be too hoppy and cover up the yeast character.

Any suggestions for a good recipe to try with this? I'm also thinking about doing extract to cut down on the variables.

I would try it with a saison. It's light in flavor and allows the yeast character to pretty much dominate the taste profile if you use low AA hops.

If you're looking for an IPA recipe try this:

12.25 lbs Pale Malt
.5 lbs Crystal 15L Malt
.25 lbs Amber Malt
.5 lbs Honey Malt

1 oz Amarillo 60 mins
1.5 oz Cascade Hops 15 mins
1 oz Amarillo Hops 5 mins

Mash 149*F
Sparge 170*F

I ended up kicking this keg in about 3 weeks, record time for me. :-D

Thanks, statseeker. My initial thought was to do a saison, but I've never brewed one before, so I wondered if there might be too many variables. But thank you for the IPA recipe; I'm giving this a whirl tomorrow eve, so I'll post whichever recipe I wind up using.
