Till the pellicle drops to the bottom. I'll make an all brett before I go to Afgan because I'll be there for a year, that would be the perfect time to do sours.

How long did it take the pellicle to form? I did a very similar beer, but don't have a pellicle yet.

it started to form about a month and a half after pitching the Brett

What Brett did you pitch? I have a saison that is stuck at 1.030 and Im thinking of repitching with brett or the roesalare blend.
