I have these starters going now:
Mesquite Bark
Pineapple sage flowers
Osage Orange (hedge apple)
La Crescent grapes
Open air at my brother in law's Dairy in Arizona

Planned for this week:
Mulberry bark
Oak bark
Apple/Pear bark
Bradford Pear (wild Asian pear) fruits if there are still any on the trees.

Avoiding mold is pretty easy, just like acetic acid bacteria, mold needs oxygen to grow. Keep oxygen out of the equation and you'll avoid mold as well.
